Recipe Roundup: A Little Spice in your Life!

Well in case you didn’t notice, I totally didn’t do the recipe roundup last week. It was Spring Break (and as homeschooling mama, I took it seriously! 😉 ) and from Sunday to Sunday, we had about 18 people in and out of our home, and 7 of those spent nights with us. It was a wonderful week with lots of family time.

Saturday night, I cooked for two of my mom’s cousins, David and Susan, and Susan’s husband Dennis. We had such a sweet time- I loved listening to their reminiscing of growing up, and some stories of my mom thrown in. We also looked at lots of photos of our extended family.

With Ben’s help, I made a pretty large meal: he grilled chicken and pork chops, I diced up veggies that he also grilled, I made Pao de Queso (if you haven’t tried it, it’s a must!), Fried Mashed Potatoes (oh yes I did) and homemade salsa to go with chips. Susan brought a d.e.l.i.c.i.o.u.s. salad as well as my weakness- Rice Krispie Treats (these were made with peanut butter! oh my!).

My cousin David loved the salsa so I decided to share the recipe here- it’s really simple!

Combine in a blender:
1 large can tomatoes with juice
1/2 bunch of cilantro
1/2 of small onion
1/2 tsp. salt (or to taste, I like salty!)
1/2 tsp. chili powder, or to taste
1/2 tsp. lime juice
Sometimes I add a can of Rotel tomatoes or a seeded jalapeĂąo

Blend until it’s the consistency you like- I usually make it pretty smooth.

Enjoy with tortilla chips- my absolute favorites are Julio’s.

OH, and my favorite recipe from two weeks ago was At the Picket Fence’s recipe for Spaghetti Squash with Sausage and Greens. This alternative to regular pasta looks SO good! I really am going to try this. Thanks, Heather! You ladies get a free month of advertising on my sidebar!
