Rest is a good thing, no? I am taking a few days break from blogging and have some wonderful guests lined up for you. Confession!
Well, ... no. More like "Observation!". (I feel that distinctions are important.) So anyway. Observation: this weather has me feeling quite sprightly! Hmm frolicsome is a good one too. I feel like a lamb and I want to scamper and scuttle around (isn't that the cutest word?), breathing deep and just embracing life. Blustery, sunny, chilly days are energizing! (Side note: Winter in Houston is a confused, short-lived affair - with the fear of having to wear shorts and run the A/C on Christmas Day being horribly real - so on the handful of days when we observe the seasons actually changing, it's so exhilarating!)For the LORD is good and his love endures forever; his faithfulness continues through all generations. - Psalm 100:5
The new adventures of spring are on their way! The dark and the cold are blustering and blowing and battling for the spotlight but we know spring will win. Whatever our fears going into this new season, we know God will win. Just like the seasons are dependable, so is he. He is constant, faithful, always to be trusted, and very much in love with us.
This is TRUTH.

He has mind-blowing plans and awe-inspiring things he wants to do with us! Let's embrace him as he ushers us into newness and wholeness! With that in mind, how would a scrumptious spring-like dessert be to celebrate the season unfolding? (There's nothing like tasty food to fortify the spirit!) Since I'm assuming you're like "duh we want the dessert!!" let's proceed. ;) Introducing... Fruit Frenzy.
Fruit Frenzy
6 eggs1 1/2 cups chopped frozen strawberries
1 1/2 cups frozen blueberries
3/4 cup chopped frozen peaches
1/3 cup shredded unsweetened coconut
1/3 cup fruit juice sweetened strawberry jam
1/4 teaspoon cinnamon
1 teaspoon pure vanilla extract
Preheat oven to 400˚ F. In a bowl, beat eggs well with a whisk. Add cinnamon, vanilla, and strawberry jam.
