A Fall Ice Cream Party

You may think I’m crazy by the title of this post- but let me explain. We live in Texas, where up until Friday, we had temps in the 90s (then non-stop rain for 48 hours thanks to Patricia) and TODAY it finally feels like fall. It’s October 26, people! It’s been fall well over a month and we’re just now getting around to enjoying it. All that to say, it’s not that surprising that we eat ice cream pretty much year-’round here, and I thought it would be fun to create a few kid-friendly Halloween recipes involving ice cream!

I ran into Randalls’ the other day while I was out shopping for our new (old) house and found these cute 2-packs of OREOs. I know, I know, how can food be cute? Well I think it totally can be! I also grabbed some vanilla ice cream, an 8 pack of the Fanta 12-oz bottles, some candy corn and a few other things.

When I got home, I let my creative juices flow. I made a Fanta float- just two ingredients: Fanta and vanilla ice cream. The 12-oz bottles were perfect for making a float, with a little left to sip on. It was SO good- tasted just like a dreamsicle. I think next time I’ll add just a little splash of vanilla extract to bring out the vanilla flavor even more.

Then I made a sundae with all sorts of goodies- the base was vanilla ice cream with crushed OREOs on top. (that alone is perfection!) One one sundae, I started with candy corn at the bottom, then added ice cream and OREOs. On another, I added candy pumpkins and a drizzle of caramel syrup on top of the OREOs. My kids, niece, and sister (who were visiting for the weekend) absolutely loved the treat, and I had so much fun making them as a surprise for them.
