Cranberry Pecan Chicken Salad Recipe

This Cranberry Pecan Chicken Salad recipe is a perfect addition to your baby shower, summer party, or just for an easy dinner!

So this series on using a $5 chicken for 3 meals is stretching out over a long period of time, mostly due to my scatter-brained-ness. (yes that’s a new word!) I came up with this cranberry pecan chicken salad recipe after seeing a similar version at Sam’s… but it was around $14.

It was a complete snap to pull together- especially because I used the meat from a $4.88 rotisserie chicken- and according to my husband, “the best chicken salad ever”! (no bias at all of course! 😉 ) I also made it for a small group of church planters’ wives that I hosted for dinner last week and they liked it, too.

It’s only 4 ingredients and makes for an easy dinner or tasty addition to a baby shower or summer picnic. I used the 2 chicken breasts the first time I made it, and a combo of white and dark meat the second time. Either way is delicious!

Cranberry Pecan Chicken Salad
  • 2 cooked and seasoned chicken breasts, chopped
  • ⅓-1/2 cup maynonaisse
  • ½ cup cranberries
  • ½ cup chopped, toasted pecans
  1. Mix all ingredients well.
  2. Chill before serving.
