Easy Summer Pasta Salad

Well friends I am posting to you today from my phone. It seems that since the school year ended (can I get a hallelujah?) I am rarely on my computer, which in my book, isn’t a bad thing. 

I made this quick summery meal last Friday when we went with friends to see a *free* performance of The Houston Symphony- actually, it was their 100 year anniversary performance!  Houston has a great gem called Miller Outdoor Theater, which hosts tons of amazing shows every year for free. We adore it and go several times each summer. It’s great for kids because it’s outdoors (you take blankets or lawn chairs) so they get to experience great culture in a not so hush-hush environment. And did I mention it’s free? 🙂

Anyway, I believe I am supposed to be sharing a recipe here. 🙂 I wanted to bring something light to eat, but wasn’t in the mood for sandwiches, so I threw together this quick cold pasta salad. Today for lunch, I had the leftovers, but warmed it up. It tasted like a different dish all together! 
Here are the directions:
Boil one pound of smallshaped pasta for about 8 minutes. Drain and rinse with cold water until pasta has cooled. Mix one packet of Italian dressing mix, 1/2 cup olive oil, and 1tbs. pesto. 
 
Coat pasta well with the dressing mix. Add 1/2 cup halved cherry tomatoes, 1/2 cup black olives, several slices chopped salami, and 1/3 cup grated asiago cheese. Chill for at least 2 hours. Before serving, add a handful of chopped basil.
