Slow Cooker Beef Bourguignon

- ½ lb applewood smoked bacon
- 1 lb baby carrots
- 1 Tbs. chopped fresh rosemary, optional
- 2.5 lbs beef chuck
- salt, pepper, garlic powder
- 1 Tbs. olive oil
- 1 chopped yellow onion
- ½ bottle red wine
- 1 cup beef broth
- 7 chopped and peeled potatoes, optional
- Cook the bacon until almost done, but not crisp. Add in the carrots to give them some bacon flavor and rosemary if desired.
- Remove the bacon and carrots and set aside.
- Sprinkle the meat with salt, pepper, and garlic powder on all sides.
- Leave the bacon drippings in the skillet and brown the cubed meat on all sides.
- Remove the meat and add 1 tbs. olive oil.
- Add the onion and cook the onions until translucent.
- Remove them and place in the crockpot.
- Add the wine and deglaze the pan, scraping the bottom to remove all the bits remaining.
- Pour over everything in the crockpot.
- Add one cup beef broth to the crockpot.
- Cover and cook on low 4-6 hours. Check beginning at 4 hours for the meat's doneness.
