Slow Cooker Beef Bourguignon

Ingredients
  • ½ lb applewood smoked bacon
  • 1 lb baby carrots
  • 1 Tbs. chopped fresh rosemary, optional
  • 2.5 lbs beef chuck
  • salt, pepper, garlic powder
  • 1 Tbs. olive oil
  • 1 chopped yellow onion
  • ½ bottle red wine
  • 1 cup beef broth
  • 7 chopped and peeled potatoes, optional
Instructions
  1. Cook the bacon until almost done, but not crisp. Add in the carrots to give them some bacon flavor and rosemary if desired.
  2. Remove the bacon and carrots and set aside.
  3. Sprinkle the meat with salt, pepper, and garlic powder on all sides.
  4. Leave the bacon drippings in the skillet and brown the cubed meat on all sides.
  5. Remove the meat and add 1 tbs. olive oil.
  6. Add the onion and cook the onions until translucent.
  7. Remove them and place in the crockpot.
  8. Add the wine and deglaze the pan, scraping the bottom to remove all the bits remaining.
  9. Pour over everything in the crockpot.
  10. Add one cup beef broth to the crockpot.
  11. Cover and cook on low 4-6 hours. Check beginning at 4 hours for the meat's doneness.
