Spicy Moroccan Chicken Croquettes

Ingredients
  • Chicken: 1 pound chicken breast
  • 2 tsp. cinnamon
  • 1 tsp. cumin
  • ¾ tsp. sea salt
  • Croquette mixture:
  • 4 cups cooked rice
  • ¼ cup slivered almonds
  • ¼ cup golden raisins, chopped
  • ½ tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. cumin
  • 3 eggs
  • ¼ cup flour
  • ¼ cup olive oil
  • Sauce:
  • ⅓ cup plain yogurt
  • 1 tsp. chili powder, or more to taste
Instructions
  1. Place chicken, cinnamon, cumin, and salt , plus one cup water in a slow cooker on high for 4 hours.
  2. Either shred chicken using two forks, or pulse a few times in a food processor until chopped. (Be sure not to over-process)
  3. Combine chicken, rice, almonds, raisins, and additional salt, cinnamon and cumin.
  4. Heat ⅛ cup olive oil over medium heat in an iron skillet.
  5. Scoop chicken/rice mixture in ¼ cup portions into skillet once oil is heated.
  6. Cook on 3 minutes, or until golden and crispy.
  7. Flip on other side and cook an additional 3 minutes or until golden and crispy.
  8. When you've cooked half the croquettes, add the additional ⅛ cup olive oil.
  9. Combine yogurt and chili powder (add more if you like it spicier).
  10. Serve yogurt sauce with croquettes.
