First ever Recipe Round-up!

Today is my first ever recipe link up! Bring your main dishes, salad, veggie, appetizer, soup, or whatever recipes! Dig into your archives and show us what you’ve got! I can’t wait to make some of your yummy creations!

I also announced yesterday my new series, veggieMIGHT.  For the next few months, I am going to be trying out and creating new veggie recipes in order to have more variety in our meals. Last night, I made up a version of whipped sweet potatoes.

I didn’t get many pictures because I had to get the men out the door for Cub Scouts, oh, and I was going on three hours sleep from the night before. Not recommended.

Here’s the “recipe” I made up:

Creamy Whipped Rosemary Sweet Potatoes

two large sweet potatoes, chopped/diced/cubed or otherwise cut up
2 ounces cream cheese, cubed
1 Tbs. balsamic vinegar
1 Tbs. agave nectar
1 tsp. rosemary
1/2 tsp. kosher salt, plus more for boiling water

Boil the sweet potatoes until tender, about 12 minutes. Add a dash of salt just prior to adding potatoes to water. Drain. Put potatoes and remaining ingredients in a stand mixer or just mix with your hand mixer in a bowl. Whip on low speed until smooth and serve hot!

Verdict: The baby loved them! Older two wouldn’t touch them after their first required bite, but they don’t like sweet potatoes. Ben and I liked them, but I would probably leave out the vinegar next time. I will definitely make them again and tweak the recipe a bit.
