Ooey Gooey S’mores Cookies

The other night, my daughter had a friend over. Granted, this friend is closer to my age than hers, and we had a fun time all hanging out. We wanted to make a dessert and s’mores came up, and also the idea of cookies. Allie, who’s 8, had the genius idea of s’mores cookies! We all got excited, I started pulling out ingredients, then realized- oops. We were completely out of eggs! So we made regular ole s’mores instead- but I could NOT get the idea of s’mores cookies out of my head!

So last night, we made them for our community group’s last session before summer begins. I came home with an empty platter, so I’m guessing that’s a sign that they were good.

At first, I couldn’t figure out how to incorporate the graham cracker element of s’mores because I figured they would just get mushy if I put them directly into the dough. I happened to have a jar of marshmallow creme around the house, so we spread that on top, then sprinkled graham cracker crumbs on top. I should mention, marshmallow creme is just divine!

Ingredients
  • one stick butter, softened
  • 1/2 cup shortening
  • 1 cup sugar
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 2 2/3 cups flour
  • 2 tsp baking soda
  • 1/2 tsp. salt
  • 1 cup mini marshmallows
  • 3/4 cup chocolate chips- semi-sweet or milk chocolate
  • 1 jar marshmallow creme
  • 1 cup crumbled graham crackers
Instructions
  1. Preheat oven to 375.
  2. Blend butter, shortening, sugars with a hand mixer.
  3. Add in eggs and stir until incorporated.
  4. In a separate bowl, mix flour, baking soda, and salt until mixed well.
  5. Add in marshmallows and chocolate.
  6. Mix wet mixture with dry mixture.
  7. Drop by tablespoons onto a cookie sheet.
  8. Bake 12-15 minutes, until golden brown.
  9. Allow to cool at least 30 minutes.
  10. Spread marshmallow creme on top, then sprinkle lightly with graham cracker crumbs.
These ooey gooey s'mores make the perfect treat- even when you can't get to a camp fire!
