The Perfect Chili

Today is my dear husband’s birthday and in honor of him I’m posting one of his recipes- The Perfect Chili!! I’m so thankful to have this guy in my life. He truly follows God which means he’s a truly wonderful husband and father to our family.

So, even though I’m a born-and-raised Texan, I have a secret. I don’t usually love chili. I mean, layer it on with Fritos and cheese for a Frito pie (yes, that’s a thing!) and I’m game, but getting excited about eating just a plain bowl of chili? Not usually for me.

Until. This past week, my husband made the BEST chili I’ve ever eaten. Seriously, just the right amount of spiciness where it had that “chili” flavor, but not too spicy for the kids. I did still use fixins (Saltines and cheese this time) but I do believe I could have eaten this plain. The second day, I had it over a baked sweet potato. That was yum as well!

The Perfect Chili

Ingredients
  • 1.5 lbs. ground meat (we used venison)
  • 1 yellow onion, diced
  • ⅓ cup chili powder
  • 1 28 ounce can of diced tomatoes (don't drain)
  • 1 can Rotel tomatoes w/ green chilies
  • 1 small can tomato paste
  • 2 Tbs. minced garlic
  • 2 tsp. salt
  • 1 tsp. garlic salt
  • 1 Tbs. cumin
  • 1 tsp. black pepper
  • 1 Tbs. sugar
  • 1 Tbs. ketchup
  • 1 cup water
  • optional: 2 cans drained kidney beans
Instructions
  1. Brown meat, reserving drippings. Add meat and drippings to a slow cooker along with the rest of the ingredients. Cook on low for at least 4 hours, stirring every hour. Taste and add more seasonings if desired.
  2. The longer it cooks, the better it tastes!

  1. This looks delicious! Thanks for sharing it. My husband LOVES Frito pie, but we also like to eat it plain with sour cream and cheese. One of our favorite ways to eat it, especially if we need a hearty meal that stretches to feed several, is served over elbow pasta! I can’t wait to try this recipe!!
