Spicy Asian Lettuce Wraps

My husband and I love Asian food of all types- Thai, Vietnamese, Chinese, Japanese- we really enjoy all of it. I was trying to think of something special to cook for Ben when he returned home from Africa this week, and I landed on Spicy Asian Lettuce Wraps. Unfortunately, Ben was pretty ill when his team returned (they all ended up sick by the next day) so his “welcome home” meal was delayed by one night.

These spicy Asian lettuce wraps are a light, delicious meal!

Heat up some sesame oil in a skillet. Brown peanuts in the oil, then add soy sauce, peanut butter, and garlic. Add in jalapenos and carrots, then sugar and chicken. Serve in lettuce and top with Chow Mein noodles. This recipe will serve 3 as a main dish or around 6 as a starter!
