Honey Sriracha Chicken

If you know me in real life, you know that I am The Pioneer Woman‘s biggest fan. {And very sad that I don’t have Food Network to watch her new show debuting this month.}

I was googling last night trying to find a recipe to use for some drumsticks I had picked up for this week. I  love drumsticks. They are flavorful and juicy when cooked well, and I just like dark meat better. Aaaand, they are cheap! I got 3 pounds at Fiesta last week for $2.80!

Anyway, after Googling for about 2 seconds, I decided to go the better route and go directly to PW’s website. I searched for drumstick recipes, and quickly found what I wanted. Of course, I hardly follow a recipe to the T, and I made some pretty major changes to this one, but the overall idea of sweet and spicy sounded really delicious, so I created these honey sriracha chicken drumsticks!

Sweet and Spicy Drumsticks

Ingredients
  • ½ cup honey
  • ¼ cup soy sauce- the authentic stuff if you can find it. I personally don't like Kikkoman's, but if that is all you have, it will work.
  • ¼ cup ketchup
  • ¼ tsp. garlic powder
  • 1 tsp. Sriracha (or to taste- depending on how spicy you like it)
  • Lawry's seasoning salt
  • 3 lbs. chicken drumsticks
Instructions
  1. Bring all ingredients to a simmer in a small saucepan, except for the Lawry's.
  2. Simmer over medium heat until very thick.
  3. Sprinkle raw chicken lightly with Lawry's.
  4. Grill chicken until almost done- about 20 minutes or internal temp of 165.
  5. Brush sauce over chicken and grill about 5 more minutes.
  6. Use remaining baste after grilling to add extra punch- but only if the raw chicken didn't make contact with your basting brush!
  7. Enjoy!

(Alternatively, you could throw all the ingredients in the crock pot and cook on low for 6-8 hours!)

For $2.80 for the chicken plus a few cents for the other ingredients- I fed 3 adults and 2 children. Pretty frugal recipe, and delicious!
