Recipe Roundup (Link Party!): Faux Fried Rice

So back last summer, when my blog was still More Bang for Your Bucks, I posted a recipe for Fried Rice. Now, I’m bringing you another one, that employs a secret weapon. What is this weapon, you might ask?

Yes, cauliflower. (No actual rice was harmed in the making of this dish.)
Now, before you click the “x” and go away from this weird dish forever, hang with me.
My husband is not easily tricked with “weird” food substitutions (well, come to think of it it is getting easier!) but he L.O.V.E.S. this dish. Even asks for it over the “real deal.”

Here are the rest of the ingredients you’ll need, along with carrots and onions, and any protein if you want to add it. And an egg. Sorry, didn’t do a good job of the “ingredients” picture.

 Simply chop up the cauliflower and grate it finely.

 See? Looks like rice!

 Add in your goodies.

And wahlah! Enjoy your healthy fried rice.


Faux Fried Rice:
One head cauliflower
three carrots, peeled and chopped
1/2 onion, chopped
3/4 tsp. garlic
1/4 tsp. fish sauce
3 Tbs. sesame oil
1/4 c. soy sauce
1 egg
protein of your choice- we use peanuts a lot (it’s so good!) or ground pork

Cut the cauliflower head in half and grate using a cheese grater. Toss stems.
Heat sesame oil in a wok for just a minute- add peanuts if using and toast for about 2 minutes, watching carefully for burning. (If using raw meat, add here and cook thoroughly.) 
Then toss in cauliflower, carrots and onions. Don’t stir for at least 2 minutes. Add in garlic, fish sauce and soy sauce. Continue cooking for 5 minutes, or until carrots are starting to become tender but not mushy.

If desired, add chopped cilantro or basil or chopped green onions. Serve with Sriacaha sauce for a little kick.
