1 pound cooked, seasoned chicken breast, chopped OR shredded
1 cup cottage cheese
1 cup fat free plain Greek yogurt
1 tsp. Tony Chachere's cajun seasoning
¼ tsp. onion powder
⅛ tsp. cayenne pepper
3 Great Day Farms hardboiled eggs
6 large jalapeno-stuffed olives, chopped
¼ cup chopped pecans, optional
Instructions
In a blender, blend cottage cheese, yogurt, and seasonings until smooth.
In a large bowl, add chicken, olives, eggs and pecans if using. Mix well. Pour dressing over chicken mixture and mix well. For best flavor, refrigerate at least 4 hours before serving.
Serve with lettuce, on bread, or with crackers.
