Lemon Blueberry Oatmeal

Hi friends! I’m just returning from a small 36-hour getaway with my family out of the city (yay!) and also took that time off of the Internet. I checked my e-mail once that whole time, didn’t login to Facebook, Twitter or Pinterest at all, and it was fabulous! Now it’s back to work and real life, but these little getaways are getting more and more needed for our family and we’re so blessed to have a few places we can stay for free.

This Lemon-Blueberry Oatmeal has become my #1 breakfast! Lots of antioxidants, whole grains, and deliciousness!

Speaking of dishes, I’ve been making this Lemon-Blueberry Oatmeal for my breakfast the last several weeks. It tastes so summery and it’s really filling. If I cook my oatmeal in the microwave, it only takes one dish! (Of course, then all the dishes for the rest of the family. 😉 )

It’s super-easy, healthy, and tastes great- an all-around winner in my book!

Lemon Blueberry Oatmeal

Ingredients
  • For each serving you'll need:
  • ½ cup oatmeal, prepared according to package directions
  • ¼ cup fresh blueberries, rinsed
  • ½ lemon
  • 1 TBS brown sugar OR honey
Instructions
  1. Cook oatmeal according to package directions. Top with brown sugar or honey and blueberries. Squeeze in juice of lemon half. Enjoy!

    I love making caramelized onions and then freezing in smaller portions. Take out for burgers, brats whatever! I also love to make and then can apple-butter in a crock pot.

  9. My go-to slow cooker dish (especially with company and big crowds) is bbq pulled pork. It is extra good served with some sweet hawaiin buns!

  15. My favorite is a kielbasa recipe my dad created many years ago. It disappears anywhere I take it! My 21yo daughter’s favorite is Orange Pop Crockpot Chicken … 1 1/2 lbs boneless chicken, 12 oz orange soda, 1/2 cup soy sauce. Combine the soda and soy sauce, pour it over the chicken in the crockpot, cook on low for 5 hours and serve over rice. Delicious and falls apart. The leftovers are great in tortillas!!

  17. Being able to brown and slow cook and only having to clean one item…. what’s not to love? But lemon juice on oatmeal???? Would never have thought about doing that….of course, I am NOT a fruit in my oatmeal kinda gal.
